  • 2 pieces chicken breasts, cooked and shredded
  • 4 cups chicken broth Use homemade for better flavor if possible.
  • 2 cups water
  • 1 cup egg noodles You can substitute with rice noodles or ramen.
  • 1 cup bok choy, chopped
  • 1 piece carrot, sliced
  • 1 piece bell pepper, sliced
  • 3 pieces green onions, chopped For garnish.
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • to taste soy sauce
  • to taste salt and pepper
  • to taste sesame oil (optional)
  • for garnish fresh cilantro (optional)

Preparation

  • Gather all your ingredients to make the cooking process smoother.
  • Pour the chicken broth and water into a large pot over medium-high heat and bring to a boil.
  • Add the shredded chicken into the pot.
  • Stir in minced garlic and ginger, allowing to cook for 1-2 minutes.
  • Add sliced carrots, bell pepper, and chopped bok choy, cooking for about 5 minutes until tender but still crunchy.
  • Add egg noodles and cook according to package instructions, stirring occasionally.
  • Season with soy sauce, salt, and pepper to taste. Optionally add sesame oil.
  • Serve hot, garnished with green onions and cilantro.

Notes

For a vegetarian version, substitute chicken with tofu and use vegetable broth. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for 2-3 months.
