Asian Chicken Cranberry Salad

  • 2 cups cooked chicken, shredded or diced Use organic chicken for best flavor.
  • 1 cup fresh spinach, chopped
  • 1 cup red cabbage, shredded
  • 1/2 cup carrots, grated
  • 1/2 cup celery, diced
  • 1/2 cup green onions, sliced
  • 1/2 cup dried cranberries
  • 1/4 cup sliced almonds Optional, for crunch.
  • 1/4 cup cilantro, chopped Fresh cilantro adds flavor.
  • 1/2 cup sesame dressing Adjust amount to taste.
  • Salt and pepper, to taste Season to enhance flavor.

Instructions
 

Preparation

  • If not already cooked, grill, bake, or poach the chicken until cooked through, then shred or dice it into bite-sized pieces.
  • In a large bowl, combine the chopped spinach, shredded red cabbage, grated carrots, diced celery, and sliced green onions.
  • Add the shredded chicken and dried cranberries to the bowl with the vegetables.
  • Pour the sesame dressing over the top of the salad. You can adjust the amount based on your preference.
  • Season the mixture with salt and pepper to taste. Toss everything together gently until the ingredients are well combined and evenly coated in the dressing.
  • Sprinkle the sliced almonds and chopped cilantro over the salad, and give it another gentle toss.
  • Serve immediately, or chill in the refrigerator for about 30 minutes to let the flavors meld together.
