Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup packed brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 2 tsp. ground ginger
  • 1/2 tsp. ground allspice
  • 1/2 tsp. salt
  • 1 cup chopped walnuts
  • 2 cups applesauce
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 tsp. vanilla extract
  • 1/2 cup unsalted butter softened
  • 3 cups confectioners’ sugar
  • 2 Tbsp. milk
  • 1 tsp. vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 13x9-inch baking pan and line with parchment paper.
  • In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, ginger, allspice, and salt.
  • Stir in the chopped walnuts.
  • In another bowl, mix together applesauce, vegetable oil, eggs, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix.
  • Transfer the batter into the prepared baking pan and spread evenly.
  • Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for 15-20 minutes, then transfer to a wire rack to cool completely.
  • For the frosting, beat the softened butter until creamy. Gradually add confectioners' sugar and milk, mixing until smooth. Stir in vanilla extract.
  • Once the cake is completely cool, frost the top generously with icing and garnish with walnuts if desired.
