Ingredients
  

For the biscuit dough

  • 2 cups all-purpose flour Make sure it's chilled.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed Important for flakiness.
  • 3/4 cup milk Add gradually.

For the apple filling

  • 3 cups apples, peeled and diced A mix of tart and sweet apples works best.
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg Freshly grated for best flavor.
  • 1/4 cup brown sugar Adjust for sweetness.
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • powdered sugar for dusting Optional topping.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the flour, baking powder, salt, and granulated sugar.
  • Add cold, cubed butter to the mixture and blend until it resembles coarse crumbs.
  • Pour in the milk and stir until just combined, then chill the dough in the refrigerator for 15-20 minutes.

Making the apple filling

  • In a medium bowl, combine diced apples with lemon juice, cinnamon, nutmeg, brown sugar, cornstarch, and vanilla extract. Toss until evenly coated.

Assembly and baking

  • Roll out the biscuit dough on a floured surface to about 1/2 inch thick and cut out circles.
  • Place half of the biscuit circles on the prepared baking sheet and spoon apple filling onto each.
  • Top each filled biscuit with another circle, gently pressing the edges to seal.
  • Bake for 15-18 minutes or until biscuits are golden brown.
  • Remove from oven and let cool slightly before dusting with powdered sugar, if desired.
