Preheat the oven to 325°F (163°C) and grease a 9×13 inch baking dish.
In a stand mixer, combine room-temperature butter, granulated sugar, and powdered sugar. Mix until light and creamy. Add vanilla extract and mix until combined.
Gradually add the flour until a soft dough forms. Reserve about one-third of the dough for topping.
Press the remaining dough evenly into the bottom of the prepared baking dish to form the crust. Bake for 15-20 minutes, until light golden brown.
While the crust is baking, prepare the apple filling. In a large pan over medium heat, combine diced apples, granulated sugar, cinnamon, ginger, and lemon juice. Cook until the apples are tender.
In a small bowl, mix water and cornstarch to create a slurry. Add this to the apple mixture and cook for an additional minute until thickened.
Pour the apple filling over the baked crust and crumble the reserved dough on top.
Return the baking dish to the oven and bake for an additional 25-30 minutes or until the top is bubbly and lightly golden.
Allow to cool completely before cutting into squares.
