  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 medium apple, peeled and diced

Optional Add-ins

  • chopped nuts or raisins For added texture

Preparation

  • Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with muffin liners.
  • In a large mixing bowl, combine the cottage cheese, eggs, applesauce, maple syrup, vegetable oil, and vanilla extract. Whisk until the mixture is smooth and well combined.
  • In another bowl, mix the flour, baking powder, baking soda, cinnamon, and salt together. Stir until everything is evenly distributed.
  • Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Avoid over-mixing.
  • Fold in the diced apple and any optional ingredients such as nuts or raisins.
  • Fill each muffin cup about two-thirds full with the batter.

Baking

  • Bake for 20-25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
