Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a large mixing bowl, combine the cottage cheese, oats, baking powder, and cinnamon. Mix well until the dry ingredients are combined.
  • In another bowl, whisk together the applesauce, vanilla extract, and honey or maple syrup until smooth.
  • Gradually add the wet mixture into the dry ingredients, stirring until everything is evenly combined.
  • Gently fold in the diced apple, raisins, or nuts if you choose to use them.

Baking

  • Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
