  • 2 cups apples peeled, cored, and diced
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp salt
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 0.5 cup butter melted
  • 1 tsp vanilla extract
  • 0.5 cup milk

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, whisk the eggs and sugar until smooth. Add melted butter, milk, and vanilla extract. Stir until combined.
  • Gradually add the wet mixture to the dry ingredients. Stir gently until just combined. Fold in the diced apples.
  • Pour the batter into the prepared pan. Spread evenly. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before slicing.

Notes

For extra moisture, you can replace some of the milk with unsweetened applesauce. Feel free to sprinkle chopped nuts or add a light glaze after cooling for an extra treat.
