Apple Butter Brie Grilled Cheese

Ingredients
  

For the sandwich

  • 4 slices sourdough bread Can substitute with whole grain, rye, or any preferred bread.
  • 2 tablespoons unsalted butter, softened For spreading on bread.
  • 2 tablespoons apple butter Adjust according to sweetness preference.
  • 4 ounces Brie cheese, rind trimmed and sliced Can substitute with Camembert or Havarti.
  • 1 small apple, thinly sliced Granny Smith or Honeycrisp recommended.
  • 1 teaspoon fresh thyme leaves Dried thyme can be used in a pinch.

Instructions
 

Preparation

  • Gather all your ingredients. Slice the Brie cheese if it's not pre-sliced and trim the rind from the cheese.

Cooking

  • Heat a large skillet over medium heat. Spread a thin layer of softened butter on one side of each sourdough slice.
  • Flip two buttered slices so the unbuttered side is facing up. Spread 1 tablespoon of apple butter on each.
  • Layer slices of Brie cheese evenly on top of the apple butter, add thin slices of apple, and sprinkle with fresh thyme.
  • Top with the remaining two slices of bread, buttered sides facing out.
  • Cook the sandwiches in the preheated skillet for 3-4 minutes on one side, pressing down with a spatula to help toast the bread and melt the cheese.
  • Flip the sandwiches and cook for another 3-4 minutes until golden brown and melted inside.
  • Remove from heat, slice each sandwich in half and serve immediately.

Notes
