Preparation

  • Place a large pot over medium heat and add the ground beef. Cook until browned, about 5-7 minutes.
  • Drain excess fat from the beef to prevent greasiness.
  • Add the diced vegetables to the pot and sauté in the beef drippings for 5 minutes until tender.
  • Stir in the beef broth and diced tomatoes, creating the soup base.
  • Add Italian seasoning, salt, and pepper. Adjust seasoning to taste.
  • Bring to a boil, then reduce heat and let simmer.
  • Add the alphabet pasta and simmer for an additional 8-10 minutes until pasta is tender.
  • Remove from heat and serve.

Notes

To store, allow soup to cool and place in an airtight container. Refrigerate for up to 3-4 days or freeze for up to 3 months. For best texture, cook pasta separately if storing leftovers.
