  • 1 cup almond paste High-quality almond paste recommended.
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened Allow to soften at room temperature.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour Scoop and level without packing.

Optional Toppings

  • 1/2 cup sliced almonds For added texture.
  • powdered sugar For dusting, optional.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine almond paste, sugar, and softened butter. Beat with an electric mixer on medium speed until the mixture becomes creamy and smooth.
  • Add the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together baking powder, salt, and flour. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • If desired, fold in sliced almonds for added texture.

Baking

  • Using a tablespoon or cookie scoop, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes or until the edges start to turn golden brown.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • If you want a touch of sweetness, dust the cookies with powdered sugar once they are completely cool.

Notes

For serving, pair the cookies with tea or coffee. They can also be garnished with fresh fruits or served with ice cream. Store in an airtight container at room temperature for about a week or freeze for up to three months.
