Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Ensure butter is at room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour Can substitute with gluten-free flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup semi-sweet chocolate chips Consider mixing dark and semi-sweet for added flavor
  • 1 cup sweetened shredded coconut Can use unsweetened for a stronger coconut flavor
  • 1 cup chopped almonds

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  • Fold in the chocolate chips, shredded coconut, and chopped almonds until evenly distributed.

Baking

  • Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
