Almond Cherry Cookies
Almond cherry cookies offer a delightful fusion of nutty flavors with a sweet and tart cherry twist, making them a perfect treat for any occasion.
Ingredients
Cookie Base
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
Dry Ingredients
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
Mix-ins
- 1 cup chopped almonds
- 1 cup dried or fresh cherries, chopped if fresh
Instructions
Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 3-4 minutes.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
- Fold in the chopped almonds and cherries gently using a spatula or wooden spoon.
Baking
- Drop rounded tablespoons of cookie dough onto the prepared baking sheet, allowing space between them to spread.
- Bake for 10-12 minutes or until the edges turn lightly golden. The centers may look a bit soft; they will firm up as they cool.
Cooling
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
