Almond bars are a delightful blend of creamy butter, crunchy almonds, and a hint of cinnamon, making them perfect for any occasion.

Ingredients
  

Base Ingredients

  • 1 1/3 cups blanched slivered almonds
  • 1 cup unsalted butter Softened
  • 2 teaspoons cinnamon
  • 1 cup sugar
  • 1 large egg (separated)
  • 2 cups all-purpose flour
  • 1/2 teaspoon kosher salt

Glaze Ingredients

  • 1 cup confectioner’s sugar
  • 1 tablespoon unsalted butter (melted)
  • 1 tablespoon water
  • 1 tablespoon lemon juice

Instructions
 

Preparation

  • Prepare a 9x13 inch baking pan by lining it with criss-crossed parchment paper.
  • Preheat your oven to 300°F.

Mixing Batter

  • Cream the unsalted butter in a stand mixer until it's light and fluffy.
  • Gradually add in the sugar and cinnamon, mixing until fully combined.
  • Beat in the egg yolk until well incorporated.
  • Sift together the all-purpose flour and kosher salt, then add them to the butter mixture and stir until just combined.
  • Press the dough evenly into the prepared baking pan.

Final Touches

  • Whisk the egg white until frothy and brush it over the top of the dough.
  • Sprinkle the slivered almonds generously over the top, pressing down slightly.
  • Bake for approximately 30 minutes, or until the top turns golden brown.

Glazing and Cooling

  • Prepare the glaze by whisking together the melted butter, water, lemon juice, and confectioner’s sugar until smooth.
  • Drizzle the glaze over the warm almond bars as soon as they come out of the oven.
  • Allow the bars to cool for about 20 to 25 minutes in the pan before cutting them into squares.

Notes

For optimal storage, place bars in an airtight container and consider separating layers with parchment paper. They can last up to a week at room temperature and up to three months in the freezer.
