Ingredients
  

Vegetables

  • 2 medium zucchinis Fresh and firm for the best results.
  • 2 medium yellow squash Look for even-sized pieces.

Seasonings

  • 2 tablespoons olive oil Can substitute with other oils if desired.
  • 1 teaspoon garlic powder Adjust according to taste.
  • 1 teaspoon onion powder Enhances flavor.
  • 1 teaspoon paprika Adds a slight smokiness.
  • to taste salt and pepper Season according to preference.

Garnish

  • Fresh herbs like parsley or basil Optional, for garnish.

Instructions
 

Preparation

  • Wash the zucchinis and yellow squash under cold running water and pat them dry.
  • Cut each zucchini and squash into even slices, about half an inch thick.
  • In a large bowl, combine the sliced zucchini and squash with olive oil, garlic powder, onion powder, paprika, salt, and pepper, tossing until well coated.
  • Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Cooking

  • Place the coated vegetables in the air fryer basket in a single layer.
  • Cook for about 10 to 12 minutes, shaking the basket halfway through to ensure even cooking.
  • Check for tenderness and a golden color; if needed, cook for an additional 2-3 minutes.
  • Remove the cooked zucchini and squash from the air fryer and garnish with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-5 days. Reheat in the air fryer at 350°F (175°C) for a few minutes to restore crispiness. Avoid freezing cooked zucchini and squash.
