  • 4 medium russet potatoes Choose uniform-sized for even cooking
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese Can use other cheese varieties
  • ½ cup sour cream Substitute with Greek yogurt for a lighter option
  • 2 tablespoons unsalted butter
  • 2 tablespoons green onions, chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika

Instructions
 

Preparation

  • Wash the russet potatoes thoroughly to remove any dirt and pat them dry with a towel.
  • Use a fork to poke several holes in each potato to allow steam to escape during cooking.

Seasoning

  • Rub each potato with olive oil, then sprinkle salt and black pepper evenly over the skins.

Cooking Potatoes

  • Preheat the air fryer to 400°F (200°C). Place the potatoes in the fryer basket, ensuring they don’t touch.
  • Cook for about 35-40 minutes, or until the potatoes are tender and can be easily pierced with a fork.

Cooling and Scooping

  • Once cooked, carefully remove the potatoes from the air fryer and allow them to cool for a few minutes.
  • Cut each potato in half lengthwise and gently scoop out the flesh, being careful not to break the skin.

Mixing Filling

  • In a mixing bowl, combine the scooped potato flesh, cheddar cheese, sour cream, butter, green onions, garlic powder, and paprika.
  • Mix until blended and creamy. Adjust seasoning to taste.

Refilling Skins

  • Spoon the potato mixture back into the potato skins, overfilling slightly.

Final Cooking

  • Place the filled potato skins back into the air fryer and cook for an additional 10 minutes at 400°F (200°C) until the tops are golden and the cheese melts.

Serving

  • Remove the potatoes from the air fryer and let them cool for a few minutes before serving.
