Air Fryer Sweet Potato Wedges

Ingredients
  

  • 3 medium/large sweet potatoes
  • 1 Tbsp cornflour cornstarch
  • 1 Tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp dried coriander
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp sea salt
  • 1/4 tsp freshly ground black pepper

Instructions
 

  • Scrub the sweet potatoes under running water, then dry them thoroughly.
  • Cut each sweet potato in half lengthwise, then cut each half into quarters to create wedges.
  • Place the sweet potato wedges into a large mixing bowl. Sprinkle cornflour over the top and toss to coat.
  • In a separate bowl, mix oregano, coriander, smoked paprika, garlic powder, olive oil, salt, and pepper. Stir well.
  • Pour the oil and seasoning mixture over the sweet potatoes and toss to ensure each wedge is coated.
  • Preheat the air fryer to 200°C (390°F). Place the sweet potato wedges in the air fryer basket in a single layer.
  • Cook for 20 minutes, shaking the basket halfway through for even cooking. Check for doneness; they should be tender and crispy.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for best results.
