Air Fryer Stuffed Peppers

  • 4 pieces large bell peppers (any color)
  • 1 cup cooked rice or quinoa
  • 1 cup black beans (canned, rinsed, and drained)
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 small onion (diced)
  • 1 cup shredded cheese (cheddar or your choice)
  • to taste Salt and pepper
  • to taste Fresh cilantro (optional, for garnish)

Instructions
 

Preparation

  • Preheat your air fryer to 360°F (182°C).
  • Wash the bell peppers and slice the tops off. Remove the seeds and membranes from the inside.
  • In a large bowl, combine the cooked rice or quinoa, black beans, corn, diced tomatoes, onion, cumin, chili powder, garlic powder, half of the shredded cheese, and salt and pepper. Mix well until everything is evenly blended.
  • Stuff each bell pepper with the filling mixture and press it down gently to pack the filling tightly.
  • Place the stuffed peppers upright in the air fryer basket, ensuring they are not overcrowded.

Cooking

  • Cook in the air fryer for about 12-15 minutes, or until the peppers are tender and the filling is heated through.
  • During the last few minutes of cooking, sprinkle the remaining cheese on top of each pepper and cook for an additional 2-3 minutes until the cheese is melted and bubbly.
  • Carefully remove the stuffed peppers from the air fryer and garnish with fresh cilantro if desired.

Notes

For meal prep, store leftovers in an airtight container in the fridge for up to 4 days. They can also be frozen for up to 3 months. Thaw in the fridge overnight before reheating.
