Main Ingredients

  • 4 large bell peppers (any color) Choose uniform sized for even cooking.
  • 1 pound ground turkey or beef
  • 1 cup cooked rice (white, brown, or cauliflower rice) Pre-cooked rice can save time.
  • 1 can black beans, rinsed and drained (15 ounces)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded cheese (cheddar or Monterey Jack) Divided into two portions.

Spices and Seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • to taste salt and pepper

For Garnish

  • to taste fresh cilantro or parsley Optional for garnish.

Instructions
 

Preparation

  • Preheat your air fryer to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them under cold water and set aside.
  • In a large skillet over medium heat, cook the ground turkey or beef until browned. Drain any excess fat.
  • Add the cooked rice, black beans, corn, diced tomatoes, garlic powder, onion powder, cumin, salt, and pepper to the skillet. Stir until combined and heated through.
  • Remove from heat and stir in half of the shredded cheese until melted.

Stuffing and Cooking

  • Stuff each bell pepper with the meat mixture, pressing down gently to pack them.
  • Place the stuffed peppers in the air fryer basket, standing upright. Cook in batches if necessary.
  • Cook for 12-15 minutes or until the peppers are tender and slightly crispy.
  • Sprinkle the remaining cheese on top of the peppers in the final minutes of cooking and allow it to melt.
  • Carefully remove the stuffed peppers, garnish with fresh cilantro or parsley if desired, and serve hot.
