  • 1 pound fresh salmon fillets, skin removed Use high-quality fresh salmon for best flavor.
  • 1 cup breadcrumbs Can substitute with gluten-free options if desired.
  • 1/4 cup chopped onion Use red or yellow onion based on preference.
  • 1/4 cup chopped fresh dill or parsley Fresh herbs enhance the flavor.
  • 1 large egg Acts as a binder.
  • 2 tablespoons mayonnaise Can use light mayonnaise for a healthier option.
  • 1 tablespoon Dijon mustard Adds a nice tangy flavor.
  • 2 tablespoons lemon juice Fresh lemon juice is recommended.
  • to taste Salt and pepper Season to your preference.
  • to spray Olive oil spray Used to prevent sticking in the air fryer.

Instructions
 

Preparation

  • Start by placing the fresh salmon fillets in a large bowl. Use a fork or your hands to break the salmon into small pieces.
  • Add the chopped onion, herbs, breadcrumbs, egg, mayonnaise, Dijon mustard, and lemon juice to the bowl. Season with salt and pepper.
  • Mix everything until well combined, ensuring all ingredients stick together. Avoid over-mixing, as it will lead to a dense texture.
  • Divide the mixture into equal parts and shape them into patties, approximately 1/2 inch thick.

Cooking

  • Preheat your air fryer to 375°F (190°C).
  • Lightly coat the air fryer basket with olive oil spray to prevent sticking.
  • Arrange the salmon patties in a single layer inside the air fryer basket, ensuring they don’t touch each other.
  • Cook for 10 to 12 minutes, flipping halfway through the cooking time, or until they are golden brown and crispy on the outside.
  • Remove the patties from the air fryer and let them cool slightly before serving.

Notes

For a delightful meal, serve patties on a bed of mixed greens with avocado, cherry tomatoes, and a drizzle of lemon vinaigrette. They can also be served in whole-grain buns with lettuce and tartar sauce, or alongside vegetable sticks, garlic aioli, or a refreshing cucumber salad.
