Ingredients
  

For the shrimp

  • 1 pound large shrimp, peeled and deveined Use uniform sizes for even cooking.
  • 1 cup all-purpose flour Can substitute with whole wheat flour for a healthier option.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs For extra crunch.

For the sauce

  • 1/2 cup mayonnaise
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon sriracha Adjust according to taste.
  • 1 teaspoon lime juice

Instructions
 

Preparation

  • Preheat the air fryer to 400°F (200°C). This takes about 5 minutes.
  • In one shallow bowl, combine the flour, garlic powder, paprika, salt, and black pepper.
  • In a second bowl, beat the eggs and set aside.
  • Place panko breadcrumbs in a third bowl.
  • Dip each shrimp into the flour mixture, coating it completely. Shake off excess flour, then dip into the beaten eggs, and finally coat in panko breadcrumbs.

Cooking

  • Arrange the breaded shrimp in a single layer in the air fryer basket, avoiding overcrowding.
  • Lightly spray the shrimp with cooking oil to enhance browning.
  • Cook shrimp for 8-10 minutes, flipping halfway through, until golden brown and crispy.

Sauce Preparation

  • While shrimp is cooking, mix mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl until smooth.

Serving

  • Once shrimp are cooked, remove from air fryer and toss in the sauce until evenly coated.
  • Serve immediately, garnished with lime wedges and fresh herbs if desired.

Notes

For leftovers, allow shrimp to cool completely, then store in an airtight container in the refrigerator for 2-3 days. Cook in air fryer at 350°F (175°C) for 5-6 minutes to reheat.
