7 Up Jello Salad
A refreshing and colorful dessert salad combining lime gelatin, 7 Up soda, crushed pineapple, and marshmallows, topped with a creamy custard and whipped topping.
Ingredients
For the Jello Salad
- 1 can 20-ounce can crushed pineapple, drained well, reserved juice
- 1 box 6-ounce lime Jello gelatin
- 2 cups boiling water
- 2 cups 7 Up soda
- 1 cup mini marshmallows
For the Pineapple Custard
- 1/2 cup granulated sugar
- 3 tablespoons all-purpose flour
- 1 large egg, slightly beaten
- 1/2 cup pineapple juice from reserved juice
- 2 tablespoons unsalted butter
For Topping
- 1 cup Cool Whip
- 2 cups Cool Whip (for topping)
- 2 tablespoons chopped pecans
- to taste Maraschino cherries (optional) for serving
Instructions
Make the Filling
- Begin by draining the pineapple thoroughly and reserving the juice.
- In a large mixing bowl, combine the gelatin and the boiling water. Stir until completely dissolved.
- Once dissolved, carefully pour in the 7 Up soda and mix well.
- Gently fold in the drained crushed pineapple and mini marshmallows.
- Pour the mixture into a 13x9-inch pan and chill in the refrigerator until set, approximately two hours.
Prepare the Pineapple Custard
- In a small saucepan, whisk together the granulated sugar, flour, beaten egg, and reserved pineapple juice.
- Over medium heat, whisk constantly until thick and creamy.
- Add the unsalted butter and stir until melted.
- Remove from heat and transfer the custard to a mixing bowl. Allow to cool for about 30 minutes.
- Fold in one cup of Cool Whip.
Assemble and Chill
- Once the gelatin mixture is set, gently spread the pineapple custard over the Jello layer.
- Spread an additional two cups of Cool Whip on top.
- Return to the refrigerator until ready to serve and sprinkle with chopped pecans before serving.
- Serve with maraschino cherries if desired.
