  • 4 large large potatoes (russet or Yukon gold) Preferably russet or Yukon gold for their creamy texture.
  • 1 medium onion Use a yellow onion for a nice sweetness.
  • 4 cups vegetable broth Choose a low-sodium option if preferred.
  • 1 cup heavy cream Adds richness and smoothness to the soup.

Preparation

  • Peel the potatoes and onion. Dice the potatoes into uniform chunks. Slice the onion into small pieces.

Cooking

  • In a large pot, combine the diced potatoes, chopped onion, and vegetable broth. Bring to a rolling boil over medium-high heat, then reduce to a low simmer.
  • Allow to simmer uncovered for about 20 to 25 minutes until fork-tender.
  • Use an immersion blender to puree the soup to desired consistency.
  • Stir in heavy cream and heat for an additional 5 minutes on low heat, stirring occasionally.
  • Taste and adjust seasoning if needed.

Notes
