  • Peel the potatoes with a vegetable peeler and cut them into cubes, keeping the pieces uniform for even cooking.

Cooking

  • In a large pot, add the cubed potatoes and pour in the vegetable broth, ensuring the potatoes are submerged.
  • Heat the pot over medium-high heat and bring the mixture to a gentle boil. Once boiling, reduce heat to a simmer.
  • Simmer the potatoes for about 15-20 minutes or until tender enough to pierce with a fork.
  • Mash the potatoes in the pot for a rustic texture or use an immersion blender for a smoother consistency.
  • Add the heavy cream and stir well to combine, creating a rich and creamy soup.
  • Season with salt and pepper to taste, stirring well.

Serving

  • Ladle the hot potato soup into bowls and top with fresh herbs or a dollop of sour cream if desired.
