  • 1 package tri-color cheese tortellini
  • 1 cup pesto (homemade or store-bought)
  • 2 slices prosciutto, chopped
  • 1 cup mozzarella cheese, divided Use ½ cup for the mixture and ½ cup for topping.

Preparation

  • Gather all your ingredients and preheat your oven to 350 degrees F (180 degrees C).
  • In a large pot, bring lightly salted water to a rolling boil. Stir in the tri-color cheese tortellini and cook uncovered until they float to the top, about 3 minutes.
  • Drain the cooked tortellini thoroughly in a colander.
  • In a large bowl, combine the drained tortellini with chopped prosciutto, pesto, and ½ cup of mozzarella cheese. Stir gently to combine.
  • Pour the mixture into a baking dish and spread it evenly. Sprinkle the remaining mozzarella cheese on top.

Baking

  • Place the baking dish in the preheated oven and bake for about 10 minutes, or until the cheese melts and turns golden brown.
  • Remove from the oven and allow to cool slightly before serving.

Notes
