  • 3 large ripe bananas (1 ½ cups mashed)
  • ½ cup creamy almond butter (120g)
  • 2 cups rolled oats (200g)
  • 1 cup chocolate chips (170g)
  • 1 tsp pure vanilla extract
  • ¼ tsp sea salt
  • 1 tsp ground cinnamon
  • cup chopped walnuts or pecans (100g)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a 9” x 9” baking pan with parchment paper.
  • In a mixing bowl, mash the ripe bananas until smooth with only small lumps remaining.
  • Stir in the almond butter until well combined.
  • Add the rolled oats and chocolate chips, stirring until evenly combined.
  • Transfer the mixture to the prepared baking pan and smooth it into an even layer.

Baking

  • Bake in the preheated oven for about 18 to 25 minutes or until the edges are golden-brown and the center is set.
  • Remove from oven and allow to cool completely before slicing.

Notes

For added flavor, customize by adding honey or maple syrup, or swapping almond butter for peanut butter. For a nut-free version, substitute almond butter with sunflower seed butter.
