  • 1 pound Chicken breast or thighs, cut into bite-sized pieces
  • 1/2 cup Orange juice (freshly squeezed or store-bought) Freshly squeezed offers the best flavor.
  • 1/2 cup Orange marmalade Adjust sweetness as desired.

  • Heat a large skillet over medium heat and add a splash of oil to prevent sticking.
  • Once the oil is hot, add the bite-sized pieces of chicken. Cook for about 6-7 minutes, stirring occasionally, until browned and cooked through.
  • While the chicken cooks, mix together the orange juice and orange marmalade in a separate bowl until well combined.
  • Pour the orange juice and marmalade mixture over the cooked chicken in the skillet. Stir well to coat the chicken.
  • Allow the sauce to simmer for another 3-4 minutes until it thickens. Stir occasionally to prevent sticking.
  • Remove from heat and let it cool slightly before serving.
