Preparation

  • In a mixing bowl, combine the cottage cheese and all-purpose flour.
  • Stir the mixture until it forms a dough.
  • If the dough feels too sticky, sprinkle in a little extra flour until it reaches a smooth consistency.
  • Turn the dough out onto a floured surface and knead it gently for a minute or two.
  • Divide the dough into four equal pieces.

Cooking

  • Using a rolling pin, roll each piece into a flatbread shape about 1/4 inch thick.
  • Heat a skillet or griddle over medium heat.

Notes

To store, allow flatbreads to cool completely before placing in an airtight container. They can be kept at room temperature for a day or two, or refrigerated for longer freshness. Can freeze by layering parchment paper between each flatbread.
